Red peanut are like regular peanuts but they are mostly used for cooking. These are usually ground to produce a thick paste that can be used to thicken the gravy. You can also eat these whole, however. Roasting enhances their flavour. They are packed with good fats and proteins. They are often added to poha, upma, cheere-r pulao etc to add a crunch. Or, you can even use this to create a nutty pudina chutney. Red peanuts also add colour and crunch to your dish if you sprinkle them over your cooked dishes.
